How to Make Shish Tawook

Shish Tawook is a famous Lebanese grilled chicken skewer recipe. It is a juicy and tender chicken marinated in yogurt, lemon, and garlic and served with pita bread. Although Shish Tawook is Lebanese, its name come from the Turkish language.

Shish refers to skewers, and tawook means chicken. The Turkish or Ottoman Empire ruled Lebanon for many years. Here is the list of ingredients and step-by-step instructions to make Shish Tawook. Read on!

Ingredients

  • Two pounds of boneless chicken breast
  • Half cup plain yogurt with whole milk
  • ¼ cup of lemon juice
  • ¼ cup of olive oil
  • Six garlic cloves, minced
  • One tablespoon of tomato paste
  • One teaspoon paprika
  • One teaspoon of cinnamon
  • Half teaspoon oregano
  • Half teaspoon of ground ginger
  • One teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Add the ingredients in a large bowl
    1. Yogurt
    2. Lemon Juice
    3. Olive Oil
    4. Garlic
    5. Tomato Paste,
    6. Salt/Pepper
  2. Put some chicken cubes in the bowl and cover it with the marinade
  3. Cover and marinate for at least four hours
  4. Thread chicken onto skewers just before grilling
  5. Add a piece of onion to each skewer, if desired
  6. Grill over medium heat for 5-8 minutes per side
  7. Place chicken inside pita bread to help keep chicken moist before serving

Serve with pita bread, butter lettuce, and garlic sauce, if desired
