How to make Lebanese Potato and Beef Stew

Ingredients
- 5 pounds of beef stew cubes
- One head of garlic
- One bunch of cilantro
- Three pounds of potato
- Two teaspoons of tomato paste
- Eight cups of water
- Salt and pepper to taste
- One large lemon or juice
- Vegetable or olive oil
Instructions
- Add eight cups of water to a stock pot to boil
- Make a paste of garlic and cilantro in the food processor
- Drizzle vegetable or olive oil in a large skillet
- Next, add 1/3 of cilantro and garlic
- Add the beef cubes to the cooked cilantro-garlic paste
- Toss the browned beef cubes in the boiling water
- Cook on a low heat for two hours until the meat is tender
- Peel and rinse potatoes
- Add potatoes to the paste and ensure they are browned on all sides
- Add the tomato paste, salt and pepper, and lemon juice to the pot
- Cover the pot and cook the potatoes on a medium heat
- After cooking the potatoes, lade serving of broth and meat into a bowl
- Garnish the dish with chopped cilantro
- Serve the dish with a side of rice, radishes, and lemon wedges
