Ingredients

  • One whole chicken
  • 1-2 cups of Freekeh
    • Use whole grain green wheat
  • Two onions
  • One teaspoon of seven spices
  • Half teaspoon of white pepper
  • Three tablespoons of olive oil
  • You need the following ingredients for boiling chicken
    • Ten cups of water
    • Half onion
    • Cloves
    • Bay leaves
    • Two teaspoons of salt
    • One teaspoon of black pepper

Instructions

  1. Add the whole chicken and spices to a large pot
  2. Add a half onion and bay leaves, cinnamon sticks, and cloves
  3. Season the chicken with salt and black pepper
  4. Now add ten cups of water
  5. Cook the chicken over light-medium heat until boiling
  6. Lower the temperature and cook for 60 minutes
  7. Remove the chicken from the heat and set aside
  8. Place 1-2 cups of Freekeh in a medium bowl
  9. Remove debris from the freekeh using your hands
  10. Use water to wash the freekeh
  11. Dice the onions and cook them until softened
  12. Add the freekeh and season the dish with seven spices
  13. Once boiled, lower the heat to a medium
  14. Cover the pot and cook until freekeh is soft and tender
  15. You can cook the freekeh for 30 minutes
  16. Now add the shredded chicken and use salt and white pepper for seasoning
