How to make Baba Ghanoush

Ingredients
- Two pounds of eggplant
- ¼ cup of lemon juice
- ¼ cup of sesame tahini
- Two tablespoons of low-fat yogurt
- Two cloves of garlic
- Extra virgin olive oil
- Chopped parsley leaves
- Salt to taste
Instructions
- Pierce the eggplants using a fork
- Place the eggplants over the hot charcoal grill
- Turn the eggplants regularly
- Ensure the eggplants are black and soft
- Use a gas stove if you don’t have a charcoal grill
- Preheat the oven to 425 degrees Fahrenheit
- Cover the stove with foil
- Now, turn on your oven fan and roast the eggplants
- Place the eggplants in a colander in the sink
- Cool down the eggplants and drain
- Peel the black skins and cut off the stems
- Ensure the eggplants sit in the colander for 30 minutes
- Puree them in the food processor using a steel blade
- Add the tahini, yogurt, and lemon juice
