How to make Muhammara

Ingredients

  • Two red bell peppers
  • Four tablespoons of olive oil
    • Use extra virgin olive oil
  • ¼ pounds of toasted walnuts
  • 2-3 tablespoons of tomato paste
  • One garlic clove
    • Make sure you chop the garlic
  • ¾ cup of breadcrumbs
  • One teaspoon of Aleppo pepper
  • Two tablespoons of pomegranate molasses
  • Half teaspoon of sugar
  • One teaspoon of sumac
  • Half teaspoon of salt
  • Half teaspoon of cayenne pepper

Instructions

  1. Preheat your oven to 425- or 450 degrees Fahrenheit
  2. Use one tablespoon of extra virgin olive oil for brushing the bell peppers
  3. Use a cast-iron skillet or over-safe pan for placing the brushed peppers
  4. Roast the peppers for 30-35 minutes
  5. Place the peppers in a bowl and cover them with plastic wrap
    1. The purpose is to trap the roasted peppers’ steam and ensure easy peeling
  6. Once the peppers are cooled, peel them and remove the seeds
  7. Now slice these peppers into tiny strips
  8. Mix the roasted strips with three tablespoons of olive oil
    1. Add tomato paste, walnuts, pomegranate molasses, breadcrumbs, sugar, sumac, cayenne, salt, and Aleppo pepper to the mixture
  9. Transfer the mixture to a bowl and cover the muhammara
  10. Place the covered muhammara in the refrigerator
    1. Make sure the muhammara has room temperature when applying it to the sandwich
    2. You can drizzle olive oil and garnish the muhammara with parsley and walnuts
