How to Make Lebanese Rice Pudding

Ingredients

  • Half cup of Egyptian rice
  • 1-2 cups of water
  • Two cups of milk

  • Two tablespoons of cornstarch
  • ¼ cup or 50g of white sugar
  • 1/8 teaspoon of mastic gum
    • Use crushed mastic gum
  • One tablespoon of rosewater
  • One tablespoon of orange blossom water

Instructions

  1. Soak the Egyptian rice for 10-15 minutes
  2. Rinse the rice properly
  3. Add 1-2 cups of water and rice to a medium-sized saucepan
  4. Bring the pan to a boil and simmer for 15 minutes
    1. Make sure the rice is tender
  5. Add milk and cornstarch to a bowl and use a fork to prepare a slurry
  6. Bring the pan to a slow boil and use a wooden spoon for constant stirring
    1. Add the remaining cornstarch and milk to the mixture
    2. Add sugar and mastic gum to the mixture
  7. Continue stirring until the mixture has a thick soupy texture
  8. Remove the pan from heat and add some orange blossom and rose water
  9. Stir to mix the rose and orange blossom water
  10. Let the mixture cool for 5-10 minutes before placing it into serving bowls
  11. Use dried rose petals and slivered pistachios for garnishing
  12. Place the rice mixture in the refrigerator for 3-5 hours
