How to Make Crispy Cheese Rolls (Rakakat)
Rakakat, also known as crispy cheese rolls, are the most famous appetizers in the Middle East, particularly in Lebanon. People make this appetizer during the month of Ramadan. Not only are these crispy cheese rolls delicious, but they are also nutritious.

Ingredients
- Half cup of shredded Akawi
- Half cup of shredded mozzarella cheese
- Two tablespoons of chopped parsley
- ¼ tablespoon back pepper
- 12 spring roll wrappers
- One teaspoon of all-purpose flour
- One teaspoon of water
- Vegetable oil for frying
Instructions
- Shred the Akawi cheese and add it to a medium-sized bowl
- Put some chopped parsley in the bowl and add black pepper
- Mix the ingredients appropriately
- Set aside a baking sheet or large-sized plate
- Mix one teaspoon of flour with water to make a thick paste
- Cut the phyllo dough correctly
- Make sure the pointy side is towards you
- Spread one tablespoon of cheese filling on the dough
- Fold the sides and then the bottom areas
- Use a pastry brush or your fingers to dab some of the paste on the triangle’s bottom
- Now fold the rolls and repeat the process to make all rolls
- Add the cheese rolls to the plate seam and make sure they are side down
- Heat the oil to 350 degrees Fahrenheit
- Place at least 4-5 cheese rolls at a time
- Fry for three minutes and ensure the rolls are golden brown
- Once fried, remove the rolls, and place them on a lined plate
- Use a paper towel for draining
- Serve the crispy cheese rolls to your family or friends
