How to Make Lebanese Molokhia

Ingredients

  • One pound or 500g of Molokhia
  • One whole chicken
  • Two large onions
  • Ten cups of water
  • Three tablespoons of cilantro
  • One bouillon cube
  • Two tablespoons of ghee or butter
  • Ten cloves of garlic
  • One teaspoon allspice
  • One tablespoon salt
  • Half teaspoon salt for seasoning
  • Four cinnamon sticks
  • Three bay leaves

Instructions

Preparing the Molokhia leaves requires the following procedure:

  1. Check the Molokhia and cut hard or long stems
  2. Soak the Molokhia in warm water
  3. Transfer the leaves to the colander after 15 minutes
  4. Drain off the water and rinse the Molokhia

Making the broth requires the following steps:

  1. Add chicken, bay leaves, onion, cinnamon sticks, and salt to a pot or deep saucepan
  2. Add ten cups of water to cover the chicken
  3. Heat the ingredients at low heat for 30 minutes
  4. Remove the chicken from the pot
  5. Sieve the broth and place the chicken on a plate
  6. Use a large fork or your hands to shred the chicken

Cooking the Molokhia requires the following steps:

  1. Add butter, ghee, or margarine to a separate pan
  2. Add garlic to the pan and fry it in the butter or ghee
  3. Fry the garlic for no more than two minutes
  4. Add the cilantro and continue cooking for one minute
  5. Now stir in the Molokhia leaves, bouillon cube, allspice, and salt
  6. Cook for about two minutes and ensure ingredients combine well
  7. Add 2-3 cups of broth to cover the leaves
  8. Cook the leaves with chicken for 20-25 minutes
  9. Stir in the lemon juice once cooked
  10. Allow the ingredients to simmer for another 5-10 minutes
  11. Serve Molokhia with cauliflower rice or Lebanese rice, or pita bread
