How to make Lebanese Lentil Soup

Ingredients
- 2 ½ cups of red lentil
- One medium cubed onion
- One large cubed and peeled carrot
- One small golden potato
- One teaspoon of cumin powder
- Two teaspoons of fine black pepper
- One tablespoon of salt
- ½ tablespoon of seven spices
- Two tablespoons of fresh and chopped parsley
- 12 cups of water
- Three whole lemons
- Fried pita bread
Instructions
- Wash lentils and place them in a large pot
- Put the onions, potatoes, and carrots into the pot
- Add water to fill the pot
- Add at least 12 cups of water
- Boil the ingredients for 40-50 minutes
- Ensure lentils are soft and tender
- Turn off or lower the heat
- Set aside the soup for 10-15 minutes
- Drain excess water and set aside it to add later if required
- Use a hand mixer to blend the soup
- Keep mixing the soul until it becomes creamy
- Return to the pot and put the spice mixture, salt, and parsley
- Bring to boil and simmer at low temperature for 15 minutes
- Remove from the heat and put into it some lemon juice
- Set aside the soup for a few minutes to cool down
