Ingredients

  • Two pounds of eggplant
  • ¼ cup of lemon juice
  • ¼ cup of sesame tahini
  • Two tablespoons of low-fat yogurt
  • Two cloves of garlic
  • Extra virgin olive oil
  • Chopped parsley leaves
  • Salt to taste

Instructions

  1. Pierce the eggplants using a fork
  2. Place the eggplants over the hot charcoal grill
  3. Turn the eggplants regularly
  4. Ensure the eggplants are black and soft
  5. Use a gas stove if you don’t have a charcoal grill
  6. Preheat the oven to 425 degrees Fahrenheit
  7. Cover the stove with foil
  8. Now, turn on your oven fan and roast the eggplants
  9. Place the eggplants in a colander in the sink
  10. Cool down the eggplants and drain
  11. Peel the black skins and cut off the stems
  12. Ensure the eggplants sit in the colander for 30 minutes
  13. Puree them in the food processor using a steel blade
  14. Add the tahini, yogurt, and lemon juice
  15. Use a pestle and mortar to pound the garlic and make a paste
  16. Mound the puree on a platter or in the bowl
  17. Drizzle the eggplants with olive oil
